My Favourite Cookbook

The New Basics by Shiela Lukin and Julie Rosso
I have been cooking for the last 40 years and if someone was to ask me what my favourite cookbook was it would have to be this one.
It is American so everything in it is in US measures and US terms like brisket or cookie or broiling so you have to just get used to that and know what they mean. The best thing about this book is that it does cover a lot of the basics. The varieties of nuts, or berries or pasta and how you use them. There is a whole chapter on Chocolate for instance with a good explanation of origins and the types of chocolate used.
